Banana & Coconut Bread
Ingredients
Bananas - 4
Eggs - 4
Blanched almond flour / meal - 1.5 cups
Coconut flour (or tapioca flour or buckwheat flour - any GF alternate) - 0.5 cups
Coconut oil - 0.333 Cups
Cinnamon - 1Tbs
Bicarb soda - 1Tsp
Shredded coconut - 0.25 cups
Raw honey - 0.25 cups
Salt - 0.5 tsp
Method
Preheat the oven to 160
Use coconut oil to grease your bread tin or line with parchment paper
Mash the bananas in a bowl
Whisk the eggs in a seperate bowl and add to the mashed bananas
Add all the dry ingredients to a large bowl
Add the combined banana and egg to the dry ingredients and mix well
Melt the remaining coconut oil and add to the combined ingredientsAdd the honey and mix well
Pour into greased bread tin and place in the oven middle shelf for 40-45mins at 160
Depending on your oven it may need more or less time. Its a moist banana bread so if you stick a skewer in its not completely dry
Cool on wire rack then serve plain or with your fav nut butter

Freezes really well or lasts about 4 days nicely in the fridge within a sealed storage container
