Easy 1 Dish Mediterranean Salad

Ingredients

  • Eggplant - whole

  • Red Capsicum - whole

  • Red Onion - whole

  • Baby Roma or Cherry tomatoes - 2 cups

  • Rocket - 3 cups

  • Basil - 2 cups

  • Garlic cloves - 5 cloves

  • Bocconcini, Burrata or Mozzarella - 150 grams

  • Olive Oil - 0.25 cups

  • Thyme - 1 bunch

  • Garlic powder - 2tsp

  • Salt and Pepper to taste

  • Nuts & Seeds to decorate

Method

This 1 dish salad is super easy, comforting and delicious!

Chop the Eggplant into chunky pieces and place in a dish that can hold the entire salad and that can be used in the oven. Chop the red capsicum into thick strips and place in the dish. Sprinkle both with olive oil, salt and pepper and bake in the oven for 25mins on 160 degrees.

Chop the red onion into chunky strips and crush the garlic gloves with the flat side of a knife, removing the skins. When the eggplant and red capsicum has come out of the oven add the whole tomatoes, chopped onion and garlic.

Generously drizzle olive oil, sprinkle freeze dried garlic powder, salt and pepper and add the sprigs of thyme. Mix together and bake for 25mins.

When slightly cooled add rocket and basil and chunky pieces of the cheese you choose.

Drizzle with olive oil and serve.
